Buzz Breakfast Burrito
- 4 Lightlife® Plant-Based Breakfast Links
- 1 tsp. olive oil
- 1/2 cup plant-based egg
- 1/4 tsp. each salt and pepper
- 2 8″-flour tortillas
- 1/3 cup black beans, rinsed and drained
- 1/3 cup green pepper, diced
- 1/3 cup red onion, diced
Heat a non-stick skillet over medium heat, drizzle in half of the oil and cook sausage links for 3 or 4 minutes turning frequently to brown evenly. Remove links to a plate or cutting board and cut into smaller, bite-sized pieces.
In a small bowl, whisk eggs with salt and pepper until combined. Pour egg mixture into same skillet, stirring and cooking until softly scrambled. Scrape eggs onto the plate.
Wipe out skillet, place skillet back on the stove and turn on medium heat. Heat each tortilla to make them easier to fold, about 1 minute on each side.
To assemble burritos, spoon scrambled eggs evenly across the middle of each tortilla. Then spoon black beans, green pepper, red onion and sausage over eggs. Fold up your tortilla burrito style!
Cut in half and serve immediately or wrap in foil and cut in half to eat on the go.
Serve with your favorite salsa or plant-based sour cream!
